Is your sweet tooth talking to you? Here’s a delightfully low carb peanut butter cookies that’ll make you smile. If you don’t indulge too often, it’s a great sweet fix that’s really easy on the carb counts. If you prefer, please leave out the sugar substitute: These wraps are perfectly delightful without it. Cut diagonally in bite-size pieces to savor it and make the treat last longer.
Peanut Butter and Cream Cheese Wraps
Preparation time: 10 minutes
Yield: 4 wraps
1 packet Splenda sugar substitute
1⁄4 cup cream cheese, softened
1⁄2 teaspoon pure vanilla extract
1⁄2 cup natural crunchy peanut butter
4 low-carb whole-wheat tortilla wraps
1 cup thinly sliced fresh strawberries
1 In a small bowl or cup, mix the Splenda with the cream cheese and vanilla until well blended.
2 Add the peanut butter and swirl together (this doesn’t have to be mixed well — just swirly).
3 Spread one-fourth of the mixture evenly on 4 low-carb whole-wheat tortillas. Sprinkle with 1⁄4 cup strawberries each.
4 Roll the tortillas burrito-style
Variation: This cream cheese, Splenda, and vanilla mixture (without the peanut butter) can be used for many treat wraps. You can add a little sugar-free jam or preserves to give it a special hidden flavor or just add a dash of your favorite sugar-free syrup (in place of the vanilla). If you want a maple flavor, use sugar-free maple syrup. I’ve been known to mix plain cream cheese with vanilla and Splenda and indulge in a couple teaspoons to ward off a sweet attack. If you close your eyes, you think you’re eating cheesecake.
