Slow Cooker Roast Turkey Breast
Turkey breasts can be dry, particularly if you are being careful about your sodium and buy one that doesn’t have added broth. The crock pot avoids that problem, given you a juicy breast every time.
1 turkey breast
2 tablespoons (15 g) low-sodium onion soup mix (see recipe in Chapter 2)
Rinse the turkey breast and pat dry. Cut off any excess skin but leave the skin covering the breast. Rub onion soup mix all over outside of the turkey and under the skin. Place in a crock pot. Cover and cook on high for 1 hour and then set to low and cook for 7 hours.
Yield: 6 servings

Asian Turkey
This is a modification of a recipe I found at Food.com (formerly Recipezaar.com) while looking for uses for leftover turkey. The original recipe called for turkey tenderloins, and it also could be made with boneless chicken breasts. The flavor is vaguely Thai.
3 cups (420 g) cooked turkey, cut into ¾-inch (1.9 cm) pieces
1 cup (150 g) red bell pepper, cut into short, thin strips
1¼ cups (295 ml) low-sodium chicken broth (see recipe in Chapter 2), divided
¼ cup (60 ml) low-sodium soy sauce (see recipe in Chapter 2)
¾ teaspoon minced garlic
½ teaspoon red pepper flakes
2 tablespoons (16 g) cornstarch
¼ cup (25 g) scallions, cut in ½-inch (1.3 cm) pieces
1/3 cup (87 g) peanut butter
½ cup (73 g) chopped unsalted dry roasted peanuts
½ cup (8 g) chopped fresh cilantro
Place turkey, bell pepper, 1 cup (235 ml) broth, soy sauce, garlic, and red pepper flakes in crock pot. Cover and cook on low 3 hours. Mix cornstarch with remaining ¼ cup (60 ml) of broth in small bowl until smooth. Turn slow cooker to high. Stir in scallions, peanut butter, and cornstarch mixture. Cover and cook 30 minutes on high or until sauce is thickened. Serve over rice or angel hair pasta. Sprinkle with chopped nuts and cilantro.

Turkey Breast with Mushrooms
Turkey breast always ends up juicy and flavorful when you cook it in the crock pot. If you want, you can thicken the sauce here with cornstarch to make gravy.
3 pounds (1/3 kg) turkey breast, halved
1 tablespoon (14 g) unsalted butter, melted
2 tablespoons (2.6 g) parsley
¼ teaspoon oregano
¼ teaspoon black pepper
¼ cup (60 ml) dry white wine
8 ounces (225 g) mushrooms, sliced
Place turkey in crock pot. Brush with butter. Mix together parsley, oregano, pepper, and wine. Pour over turkey. Top with mushrooms. Cover and cook on low 7 to 8 hours.
Yield: 9 servings
